This Cinco de Mayo, celebrate with an authentic Mexican dessert. This Mexican cookie is ridiculously tasty and extremely easy to make. This simple cookie rolled in cinnamon and sugar will leave you wanting more.

 

Ingredients:
  • 1 cup butter
  • ½ cup confectioners’ cookie
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 ½ cups all purpose flour
  • 1 cup confectioners’ sugar
  • 1 teaspoon ground cinnamon

 

 

Step 1:

Preheat the oven to 350 degrees. If your cookie sheet is not non-stick, then grease it.

Melt the butter. In a medium bowl, mix the butter and ½ cup confectioners’ sugar until it is smooth. Stir in vanilla.

In another bowl, combine the flour, salt, and ½ teaspoon of cinnamon. Slowly stir this into the liquid mixture until it starts to form a stiff dough.

Shape the dough into one-inch balls. In the bowl you used to mix the flour and salt, combine 1 cup confectioners’ sugar and 1 teaspoon cinnamon. Roll the balls in the cinnamon mixture until they are completely covered.

Bake the cookies for 15 to 20 minutes or until they are nicely browned. I kept mine in for 20 minutes.
