Egg Salad Lettuce Wraps:

Salad: 1 dozen pastured eggs, hard boiled, peeled, and chopped (enough for leftovers)
2 green onions, chopped finely
1 kosher dill pickle, chopped finely
½ cup mayo
1 Tblsp stoneground mustard
2 Tblsp pickle juice
Few dashes hot sauce
Salt and pepper, to taste

To Serve: 1 head of butter lettuce
Your choice of sides

To Make: Put the chopped eggs, green onions, and pickle in a large bowl. Add the mayo, mustard, pickle juice, and hot sauce and mix. Season with salt and pepper if desired.
Serve on a butter lettuce leaf. Enjoy with yogurt and blueberries or fresh veggies…..YUM!!

                                                                                           Pizza Roll-Ups:

Whole Wheat Tortillasspoon-fork-knife
Pizza Sauce or Your Choice
Generous Amount of Greens (Spinach, Kale)
Mozzarella Cheese

To Make: Place tortilla on a plate. Spread sauce over tortilla, sprinkle cheese on top and cover with greens. Roll tortilla up and slice into pieces, use toothpicks to hold into place if desired (I find this helpful!). Enjoy with carrots and hummus for a delish lunch!

*many variations on this one, depending on your taste:  Add pepperoni or other meat to the pizza, opt for a peanut butter & banana roll-up or go with a chicken ceasar salad roll-up!
